Risotto is especially good when you feel like you are capable of violence post work. It requires you to stir pretty much continuously. So pause and take the time to repeat that circular motion whilst staring at the pan or into space and let your troubles melt away. Don’t worry there is something to do with your other hand, the recipe also REQUIRES you to open some basic white wine early doors so it would be pretty ridiculous not to pour yourself a glass for your stir-fest. Hey it’s ‘basic’, it’s early in the week, you are just not wasting it. So it pretty much doesn’t count.
There are so many many variations on an excellent theme with risotto, this is by no means the king but it’s good midweek doesn’t need really any special ingredients, quite basic and you can use up the chorizo you might have left from Spanish Omelette. Will show you some other goodies later like wild mushroom, smoked haddock and poached egg etc.
But all start the same way and technique the same.
ingredients
1 large onion
1 big mug of rice
Big splash of white wine
Chicken stock (probably approx 3 jugs)
Chorizo (good couple of handfuls chopped)
Fine green beans
Red pepper
Cherry tomatoes
Lemon
Parmesan
Olive oil
Step 1 – Use a heavy saucepan, add a little oil and your chopped onion. Stir (this action pretty much continues throughout) add your chorizo and once the oil starts to come out the chorizo then tip in the rice, stir and coat rice in oil.

Step 2 – Pour in a big splash of wine and allow to bubble and cook off a little. You guessed it, stir. Chop the peppers and put on a baking tray with the cherry tomatoes, drizzle with oil and balsamic vinegar and put in the oven at 180c.br />

Step 3 – Make your chicken stock in a measuring jug and begin to add to the rice bit by bit until it gets absorbed gradually.

Step 4 – Keep adding stock and stirring genius. Until the rice is nearly cooked. Chop the green beans into bits and add raw is fine, allow to cook in stock.

Step 5 – Take the vegetables you have been roasting out of the oven and add to risotto.

Step 5 – Stir in some rocket leaves. Mmmm Cheffy.

Step 6 – Get ready to finish bitches (sorry just slipped into that there…) you need Parmesan, lemon juice and olive oil to dress. Grate in cheese, save some for the top, squeeze in lemon, serve with a little extra rocket and dress with extra virg.
Right, that should be the urge to kill out of your system and you’ve used all of half a glass of wine out that bottle – just finish it.
