One Pan Fish

Christmas is over and let’s face it these geese are cooked. This will help roll you into the new year. From Jamie’s 5 ingredients – v good and only 20 mins to do. 
Ingredients:

  • 2 fillets of haddock
  • 200g cherry tomatoes
  • 1 bunch of basil 
  • 200g of rice 
  • 1 small jar of green olive tapenade
  • Red wine vinegar 

Method:

  1. Put the rice into a shallow casserole dish with lid, turn on the heat and mix with tapenade. Pour over 400mls boiling water and bring up to boil. 
  2. While that is boiling cut the tomatoes in half and add to bowl with 2 Tbsp olive oil and 2 Tbsp red wine vinegar, lots of salt and pepper and tear in most of the basil leaves.
  3. Nestle the fish into the rice and add the tomato mix. Leave to cook for 10 mins. Then remove the lid and allow liquid to evaporate. 
  4. Serve to bowls, tear in remaining bowls, add more black pepper, top the fish with the remaining tapenade (about another spoonful per bowl) and drizzle with extra virgin olive oil. 

That is literally it. V v v v v v easy and nice for January!!
