
This is a cheat/quick way of making Ramen as the reallllllllllllllly good stuff take hours and I know you don’t have that as you are busy saving lives. SO here we go an easily achievable dinner, fairly light on Kcals too so you have a hope of fitting into that Jenny Packham in few months π This is a version of version I tried from Olive Magazine but there are literally hundreds of way to do this so you don’t have to follow this too closely and it will still be good.
Ingredients
- Frying / minute steak or fancier steak if you have the dollar – Sirloin works well (approx 300g – fat trimmed)
- Ginger (thumb-sized sliced)
- Garlic (1 clove, crushed)
- Ramen noodles 200g
- Other veg (could be carrot peeled and shredded, been sprouts, spinach, baby corn, pak choi, etc.)
- Spring onions (2 sliced)
- Coriander (small bunch to serve)
- Beef stock (1 ltr)
- Sesame oil
- Mirin /Japanese rice wine vinegar (1 Tbsp)
- Soy sauce (3 Tbsp + more for serving)
Method:
- Cover the steak in the soy sauce, mirin and oil and fry on a griddle or hot frying pan for 2 mins each side then set aside.
- In a pot / wok heat the stock and add the ginger, garlic, simmer for 5 mins.
- Add the noodles and any other veg you are using
- Season with soy sauce, bring to the boil and simmer for 2 mins more
- Divide between bowls, sprinkle with coriander and spring onions.
- About 400 Kcals?
I STRESS this is an approximation of the real thing – you don’t get the deep flavour in the broth that you should from a Real Ramen, but sometimes you just need an approximation of the real thing. Wednesdays, that’s what this is good for.
