I know you are trying to he healthy right now and it is to be applauded. However, it does involve more than squatting to the freezer to get ice cubes for your gin and tonic. Here is a salad especially to usher in the new you to help you along with your plan.
Ingredients:
- 4 Eggs
- 1 jar nice albacore tuna
- 1 pack of green beens
- 2 heads of little gem lettuce
- half bag of rocket salad
- half pack of cherry tomatoes
- 3 anchovy fillets
- 100g pitted black olives
- 1/2 bag of salad potatoes
- Couple of slices of stale crusty bread (optional)
- 3 Tbsp olive oil (for vinaigrette)
- 1 Tbsp white wine vinegar (for vinaigrette)
- 1 clove garlic (for vinaigrette)
- tsp dijion mustard (for vinaigrette)
- salt and pepper
Method:
- You need two pans of cold water, in one add the salad potatoes and bring to the boil, cook until they slip off a sharp knife then drain and set aside to cool.
- In the other pan place in your eggs into the cold water and bring to the boil. Let it bubble for 7 minutes, three minutes into the boiling add the green beans (this is what nigella does).
- Put your oven on to 180 degrees. Slice your cherry tomatoes and put them on an oven tray with salt and pepper and put them in to roast.
- Fry the stale crusty bread in a hot frying pan with olive oil until golden brown, remove and place on kitchen paper to soak up some excess oil.
- Remove the beans and eggs from the heat and drain in a sieve and run the whole lot under the cold tap so they all stop cooking.
- Tear the little gem and add to a bowl along with the cold green beans and the rocket salad.
- Make the vinaigrette, add all the ingredients together into a clean empty jar and shake vigorously.
- Chop up the anchovies very small (yes just use them) and tip into the salad with the cool potatoes, tomatoes, olives and mix in as much dressing as you like.
- Place in the tuna and then plate up, peel the shells off the eggs (it is easier to do this under the tap) and then quarter them. They can be squiggly and weird but persevere. Serve. Nicoise Bitches!
