Crumpets

crumpetsI am going to try and do a load of recipes here to catch up, so keep up. This sounds hard but it really is not. The recipe featured in delicious magazine but for double this quantity. My picture is not too good  – i.e. they don’t have little holes in them – that is because I used normal catering rings that I already have and they are too deep so the mixture didn’t bubble up properly. They still tasted great but you should really get the proper rings, they are pretty cheap and are helpful for cooking  eggs in too – you can fry them like little McMuffin eggs – weirdly satisfying.

Right now you are tooled up – we can begin. This recipe makes 4 – 5 so if you want more double it very easily. You will just need to keep making them in batches on the hob.

Ingredients:

  • 140ml milk
  • 115g strong white bread flour
  • 1/2 tsp fine sea salt (any salt)
  • 1/2 7g sachet of fast action dried yeast (approx 3.5g)
  • 1/4 tsp caster sugar
  • melted butter for greasing

Method:

  • Heat the milk and 25ml water in a saucepan until just warm enough to put your finger in.
  • Meanwhile put the flour, salt, yeast and sugar in a bowl (large enough to mix in)
  • Make a well in the center and pour in the wet ingredients
  • Stir together – stop as soon as it is smooth, don’t overwork.
  • Cover bowl with tea towel and leave in a warm place for 45 mins. Not too warm – not in front of a radiator, don’t slam it around you want to be careful with the air in it!
  • The mixture will rise and form some bubbles.
  • After 45 min heat the oven to 150 degrees
  • Brush the inside of the crumpet rings with melted butter.
  • Put a flat griddle/frying pan on the heat and brush the bottom with melted butter.
  • Arrange the rings in the pan as many as will fit and when the butter is sizzzling spoon in 3 – 4 Tbsp of the batter.
  • Turn down the heat to low and cook for 10 – 15 mins yous should see bubbles form in the mixture and then burst. The bottoms will be browning.
  • Put a knife down the side of the ring and dislodge and remove, flip over the crumpet and cook for 2 mins more.
  • Set the ready crumpets on a baking sheet at the side and re-grease the crumpet rings and repeat with the rest of the batter until its finished.
  • Put all the crumpets in the oven for 5 – 8 mins.
  • EAT THEM !!! THEY ARE AMAZING. or cool and toast later.
