Quesadillas

If you are looking for veggie recipes (and you say you are) then this is a good, flexible and speedy option. QuesaDILLAS! This recipe uses brussels sprouts (yes really) and it comes from your friend and mine, Jamie Oliver. You could use many different things inside though, the important thing is getting the technique and then you can pretty well use up any veg or anything actually in them. Good for speedy dinner and I know you are busy saving lives so, lets not waste time!! (Serves 2)

Ingredients:

  • 1 red onion
  • 150g Brussels sprouts
  • 1 small knob of unsalted butter
  • 1/4 tsp cumin seeds
  • 1/4 tsp smoked paprika
  • few sprigs of fresh thyme
  • 1 lime
  • 3-4 flour tortillas
  • 80g Pecorino cheese (or any cheese)
  • 4 Tbsp natural yogurt, soured cream or creme fraiche
  • Sriracha hot sauce

Method:

  • Peel the onions and finely slice with the sprouts, place in a large frying pan on a medium heat with the butter, cumin seeds and paprika and thyme leaves (picked off the stalks duh..)
  • Fry for nearly 20 mins until everything is carmalised then squeeze in the lime and stir.
  • Lay the tortillas on a flat surface, sprinkle a good grating of cheese over half of the clock face of each.
  • Sprinkle the sprout filling on top of the cheese and then add a bit more cheese
  • Fold the tortillas in half and press together
  • Transfer two to a frying pan and fry on a medium heat until golden and crisp, flip over.
  • When the cheese has started to melt they are done. Tip out and do the remaining ones.
  • Put on a board, let cool for 1 min (otherwise they spill out) then cut into wedges and serve with lime wedges.
  • Stir the sriracha into the yoghurt and serve alongside.

You can add anything inside, basically put any veggies and cheese inside and they are amazing. Serve with Tequila πŸ™‚ YEEEEE HA.
