Fish pie is the best – but it can be quite a bit of faff. Just do it at the weekend.
Ingredients:
1 fillet haddock (or any white fish)
1 fillet smoked haddock
1 small pack of prawns
2 cups of peas (ish don’t go crazy measuring)
3 eggs
parsley
milk
flour
butter
potatoes
Step 1 – Peel your potatoes, put in cold water bring to the boil and cook, when ready (prob around step 3, drain and mash) For now – put your two types of fish into a pan and cover with milk, heat through until fish begins to flake apart. Remove from milk with slotted spoon and flake into your pie dish. Drain milk off and save in a bowl for later. mmm fishy milk.
Step 2 – Boil your eggs (hard-ish boiled) 6/7 mins in boiling water remove and peel (you will have to run them under cold water if you want to do this straight away, i would leave them a min or you will burn your chubby little fingers).
Step 3 – Start a roux in saucepan. Yes that’s right this is a cooking thing. Basically put in a knob of butter, (not literally a knob-sized amount because that would be quite variable and your frame of reference might be full of outliers from the curve of normal distribution..small side I’m guessing). Anyway about a golf ball sized amount, maybe a little more. Melt. Add some plain flour, keep adding until the mixture comes together and no longer looks like a liquid but actually looks like its sticking together like a solid. When you can move it as one thing you are there… add the fishy milk gradually – use a whisk to bring it together, making sure all the lumps are out before adding more. If you get to the end of your milk before it looks like a smooth sauce add some normal milk to top up.
Step 4 – Chop your peeled eggs and add to you pie dish, add your frozen peas and raw peas, pour over the fish milk sauce. Season with some salt and pepper and sprinkle on the parsley. Cover with mash and spread to edges of your pie dish. Drag a fork up and down it like you are ploughing a field, this will give you lots of crispy bits. If you are feeling creative – draw something, maybe a fish would be apt.
Step 5 – Brush with milk or a beaten egg if you have a pastry brush – if you don’t then buy one now because this recipe and others require brushing egg on things. mmmm. Put into oven 180-200 for 30-40 mins.
MMMMM fishy business. Enjoy with maybe some greens for your digestive health.
