Spanish Omlette

This is so easy it’s ridiculous. Useful for making ahead. For instance I’m not even going to eat this till tomorrow but hey look at that it’s ready now. It’s good if you know you are going out for a drink and will be incapable of cooking tomorrow. Or use for lunches, or a nice couple might make ahead and leave out for one another should their schedules conflict, but you might have to imagine that last scenario.

ingredients
1 large onion
1 red pepper
Chorizo
Potatoes (4-5 med)
4-5 eggs
Small tub creme fraiche
Parsley

Step 1 – get your frying pan out, even better if it has a metal handle. Put the raw potatoes in and see if it looks full-ish if not add one more.

Step 2 – peel potatoes and put in pot of cold water, bring to boil and cook till fall off sharp knife (fully cooked)

Step 3 – dice onion, pepper and chorizo and fry till soft.

Step 4 – drain potatoes and allow to cool a little, then slice roughly or cube if you can’t be arsed. ‘Rustic’ will do. Add to pan.

Step 5 – crack your eggs into a bowl and mix in creme fraiche (add a little splash of milk – yes I know not in ingredients above but keep your hair on) when mixed pour over everything in pan.

Step 6 – cook over hob for about 10 mins (quite a low heat as butt can burn) till starts bubbling a bit at side.

Step 7 – put grill on, put pan under grill (TOTES OBVS BUT PROBABLY NOT TO YOU – IF YOUR FRYING PAN HAS A PLASTIC HANDLE KEEP IT POKING OUT) grill until browned, take out sprinkle with parsley.

Eat warm with salad etc. or leave to cool and eat with salad. Whatever you like, you’re an adult, make it work.
